You’ve got a lot going on and the last thing you want to be doing is spending an hour or more making dinner at night! Quick Meal Mondays is all about quick and easy recipes that can be put together in 30 minutes or less, but they are still crowd pleasers!! Some will be healthy, some will be decadent but all of them will be quick, easy and delicious!

This week’s submission is an easy and quick meal, created by…me! One of my favorites!
- 1 pkg of gnocchi (can substitute pasta if desired)
- 1/4 cup of pesto sauce
- 1/2 cup of julienne cut sun dried tomatoes
- 1/4 cup of sliced calamata olives (more if you love them!)
- 1 (14oz) can of quartered artichoke hearts
- 1 chicken breast (optional)
Boil a large pot of water to cook your gnocchi (or pasta). While water is heating up do any necessary chopping. You can buy everything pre-chopped to save time, but even if you have to chop yourself, you’ll do it in under 30 minutes for sure.
Boil gnocchi until cooked, typically takes about 4 minutes! You’ll know they are done because they float to the top of the water.
Once gnocchi is cooked use a big bowl to mix together gnocchi, pesto, sun dried tomatoes, olives and artichoke hearts. Stir until the pesto sauce covers all ingredients.
That’s it! If you want to add chicken as well: while the water is heating up, cut up one breast of chicken into bite size pieces. (Two breasts if they are small) Pan fry in olive oil (I use the oil from the sun dried tomatoes jar, yum!), add salt and pepper to taste, then add chicken to the mix when you combine all ingredients together.
